Winter Collaboration with Chef Ryan Brosseau

An homage to French-Canadian flavors marks the sixth Chef Collaboration at Marisol.

Executive Chef Ryan Brosseau brings a passion for preservation and pickling, whole-animal butchery, and bread baking to Dear Margaret, the restaurant he opened with owner Lacey Irby in January 2021. A popular spot in Chicago’s Lakeview neighborhood, Dear Margaret’s menu pays homage to Brosseau’s French-Canadian mémé (grandmother) Margaret, with a nod to the farmers and purveyors from whom he sources high-quality local ingredients. Originally from Canada, Brosseau moved to Chicago in 2010 to pursue cooking and devoted time to working in the kitchens of Perennial Virant, Found, and Table, Donkey and Stick. He served as opening executive chef for Le Sud.

Chef Brosseau’s featured dish is a delicious duck confit salad, crafted with white beans, roasted pumpkin, demi-glace, pickled onion, arugula, Banyuls vinaigrette, fines herbes, and cured duck yolk. This vibrant, seasonal creation is available starting December 3 for $24.
